In 1999, Charles opened the first Delamar hotel in his beloved hometown Greenwich, Connecticut, and that marked the beginning of his vision of evolvement.

You will experience the passion and dedication that Chef Frederic Kieffer, who also oversees the Artisan in Southport and West Hartford, the other two Delamar hotel locations, has been investing in all his restaurants. A wide selection of fresh seafood that includes oysters, littleneck clams, jumbo white shrimp, lobster cocktail or caviar accompanied with a glass of champagne are perfect starters. The New England Seafood Chowder is excellent; the combination of clams, oysters, shrimp, and the shiitake leaves you with a rich and buttery flavor. The composition of the Tuna Tartare with cider cream, honeycrisp apple, and date-pumpkin oil dressing amplifies the sensations on your palate. His selection of entrees is made for every taste, from Vegan Tian Nicois to homemade fresh pasta with lamb or lobster, vegetarian Goat Gouda Crusted Halibut, fresh fish such as salmon and whole branzino, the famous Chicken Paillard, and of course, the Prime Filet Mignon Maitre D’, to highlight a few. The selection of exquisite red and white wines by L’Escale’s sommelier makes a perfect pairing with the dishes in a journey through the best vineyards of the world.
An essential and decadent experience to your meal is the Pâtissiere Chef Wendy Laurent’s menu to indulge you with delicious Classic French desserts. To continue the celebration, the lounge is the ideal place to enjoy L’Escale signature cocktails with an intimate feel and lively music.
When the warm weather arrives, guests can dine or have a cocktail on the splendid terrace as well, and even arrive in their private yacht with straight access to the restaurant.
The Delamar Spa is on the second floor of the hotel. A calm interior mixed with the aroma of natural essential oils stimulates a meditative state. You can enjoy an extensive selection of massage therapies and facials, including a full-service nail salon by Beautiful Nails. The service is truly bespoke, you can choose, combine and add anything you want. The Delamar hotel has partnered with Tesla showing support through environmentally conscious behavior. The property, indeed, serves as a great base to discover the surroundings of the charming and affluent town of Greenwich, Connecticut. A Tesla car can be requested to pick you up from the train station or drive you around in a radius of three miles.
